PCSO Roy Collins was cycling along Pevensey Bay Road towards the Kingsmere Estate just after 7pm on April 8 when he was attacked.
The bottle caused a severe nose bleed.
A number of residents immediately went to the assistance of PCSO Collins and provided first aid until paramedics and police arrived.
Witnesses passed on information to officers about details of the car involved and descriptions of the four occupants.
PCSO Colllins received treatment from paramedics, but did not need to go to hospital.
Police say they don't know whether the bottle was thrown deliberately at the PCSO, or whether it was an accident.
Officers are asking for any other witnesses to contact them on 0845 60 70 999 quoting serial 1486 of April 8.
They also want to speak to the occupants of the car, believed to be an older style green Ford Fiesta.
Tony Wakefield, the specialist neighbourhood Inspector, said, "This incident had the potential of causing serious harm to PCSO Collins but thankfully he only suffered slight injury and has now returned to work.
"I would like to thank the members of the local community for the help and assistance they gave to Roy."
PCSO Collins added, "I would like to say a big thank you to those members of the public who came to my assistance.
"Special thanks to the youngsters from the Kingsmere estate for the concern and compassion shown by them and also for the information given to police officers in attendance.
"I look forward to continuing my role as a PCSO in this area."
